Case Studies

  • • Client Goals: A west coast company approached VFW to ideate, formulate and help commercialize a 6-flavor line of non GMO, vegan sprouted nut & seed snacks (both sweet and savory). Timing requirements were to go from ideation to final formulas in 8 weeks in order to launch at an important national tradeshow.

    • Actions: Within a week of engagement, VFW team visited client facilities and production site, understood current production requirements and began ideation and formulation of over 10 flavors for screening and further optimization.

    • Outcome: Client launched 6 product skus in time for 2023 Expo West Tradeshow, enabling sell-in to key retail partners at this important commercial event.

  • • Client Objectives: A Keto snack company with large retail presence approached VFW in Fall 2021 with a 3 month timeline to improve and cost reduce a line of keto cookies and crackers at two manufacturing sites

    • Actions: A team of 3 scientists and technicians developed a rapid approach to analyze cost inputs and reduce formulation cost by 15%, while improving taste and texture.

    • Results: VFW enabled a successful launch of improved lower cost products as part of a pipeline of new flavors and optimized process at client coman.

  • • Client goals: After two years of effort with other product development firms and comans, a client was still unsuccessful in creating an extruded cracker formula that would process well on standard lines while maintaining their strict nutritional requirements.

    • Actions: VFW scientists reviewed the formula and measured critical functional attributes of each ingredient to create a rough model to understand the tradeoffs between dough rheology, processing and nutritional profile. VFW experience in commercial scaling of these types of products helped accelerate the project.

    • Results: Within 6 weeks VFW had solved the processing issue and the client moved onto trials and commercialization with a formula that met their nutritional requirements and with an improved texture.

  • • Client Goals: Our client wanted us to help them determine the fundamental functional properties of their ingredients, and use that information to build a sell strategy and value proposition for key product segments .
